Introducing Smith’s newest electric knife sharpener, the Adjustable Edge Pro. This new sharpener features Smith’s interlocking wheel technology in both DIAMOND and CERAMIC abrasive materials, and an angle adjust dial that enables you to sharpen everything from thin kitchen knives to thicker hunting knives at the same angle as the original factory edge. Just set the angle, then pull your blade through the slots. It’s that easy! The diamond-coated interlocking wheels will quickly sharpen a very dull or damaged blade, then finish the cutting edge to a smooth, razor-sharp finish with the interlocking ceramic wheels in the FINE slot. This combination of COARSE and FINE sharpening wheels makes this sharpener extremely versatile. It will sharpen everything from an extremely dull or damaged straight edge blade to already sharp blades in need of a quick touchup. It also has a manual serrated blade sharpener that stores in the housing when not in use.

NOTE: Angle, as used in these instructions, refers to the angle at the cutting edge. If your knife brand is not listed, please contact the knife manufacturer for specific angles.Information Source for Kitchen Style knives - Based on third party information. Information Source for Sporting Goods knives - Verbal communication with manufacturer representative and/or manufacturer's website.
2. Place sharpener on a flat, sturdy surface and insert knife into the appropriate sharpening slot. Select the COARSE slot if your blade is dull or damaged. Select the FINE slot if your blade is already sharp and just needs light honing.
3. With the knife blade straight up and down and fully inserted into the slot, tilt the tip of the blade slightly downward and pull the blade through slot from heel to tip using a smooth, consistent stroke and moderate, downward pressure. If your blade curves up to the tip, lift up on the handle of the knife as you approach this portion of the blade to sharpen all the way out to the tip.
4. Continue pulling the knife blade through slot from heel to tip (never back and forth) approximately 8 - 10 times or until sharp. NOTE: Extremely dull or damaged blades or blades made of very hard steel may require additional pulls to achieve desired sharpness.
5. If you selected the COARSE slot to begin the sharpening process, move to the FINE slot and repeat steps 3 & 4 to finish the edge. If you selected the FINE slot and were just touching up an already sharp blade, your blade should be ready to cut.
Sharpening Instructions for Serrated Edge Blades:
1. Insert serrated portion of your knife blade into the slot marked SERRATED.
2. With the knife blade straight up and down and fully inserted into the slot, pull the serrated portion of your blade through slot from heel to tip using a smooth, consistent stroke with light, downward pressure. Allow the blade to rise and fall as the serrations travel over the ceramic stones.
3. Continue pulling the serrated portion of your blade through the slot approximately 8 - 10 times or until serrations are sharp.
Replaceable Carbide Blades and Ceramic Stones:
When the carbide blades or ceramic stones stop removing metal from the knife blade, they should be replaced. Contact Smith's to purchase replacement blades or stones and for instructions on how to replace them.
Care & Use:
Always clean your sharpener after use. Clean with damp cloth or mild brush. Do not rinse with water. Store in a drawer or cabinet.
