This sharpener offers two stages of sharpening (COARSE and FINE) for all types of straight edge knives with a grind on both sides of the blade and a fixed-angle slot for sharpening serrated edge blades. Sharpening Instructions for Double-Beveled, Straight Edge Blades:
1. Set the sharpening anlge by pushing down on the top of the adjustment knob and turning to the desired angle. If factory angle is unknown, use the angle chart on the inside of this card or follow suggested angles printed on product and knob.

2. Place sharpener on a flat, sturdy surface and insert knife into the appropriate sharpening slot. Select the COARSE slot if your blade is dull or damaged. Select the FINE slot if your blade is already sharp and just needs light honing.
3. With the knife blade straight up and down and fully inserted into the slot, tilt the tip of the blade slightly downward and pull the blade through slot from heel to tip using a smooth, consistent stroke and moderate, downward pressure. If your blade curves up to the tip, lift up on the handle of the knife as you approach this portion of the blade to sharpen all the way out to the tip.
4. Continue pulling the knife blade through slot from heel to tip (never back and forth) approximately 8 - 10 times or until sharp. NOTE: Extremely dull or damaged blades or blades made of very hard steel may require additional pulls to achieve desired sharpness.
5. If you selected the COARSE slot to begin the sharpening process, move to the FINE slot and repeat steps 3 & 4 to finish the edge. If you selected the FINE slot and were just touching up an already sharp blade, your blade should be ready to cut.
Sharpening Instructions for Serrated Edge Blades:
1. Insert serrated portion of your knife blade into the slot marked SERRATED.
2. With the knife blade straight up and down and fully inserted into the slot, pull the serrated portion of your blade through slot from heel to tip using a smooth, consistent stroke with light, downward pressure. Allow the blade to rise and fall as the serrations travel over the ceramic stones.
3. Continue pulling the serrated portion of your blade through the slot approximately 8 - 10 times or until serrations are sharp.
Replaceable Carbide Blades and Ceramic Stones:
When the carbide blades or ceramic stones stop removing metal from the knife blade, they should be replaced. Contact Smith's to purchase replacement blades or stones and for instructions on how to replace them.
Care & Use:
Always clean your sharpener after use. Clean with damp cloth or mild brush. Do not rinse with water. Store in a drawer or cabinet.
